This year Roberto’s Restaurant is celebrating its 25th anniversary with different activities throughout the year. It was a deliberate choice to name the restaurantafter its founder Roberto Payer. There was no signature restaurant at Hilton Amsterdam when Roberto Payer became the hotel’s general manager. However, more and more Mediterranean influence was used in the restaurant’s kitchen until it became purely Italian. This also applied to the restaurant’s look and feel. Therefore, the name was obvious: Roberto’s Restaurant.
