The story of Roberto's Amsterdam starts 30 years ago when Roberto Payer takes office as General Manager of Hilton Amsterdam. His Italian roots can now be found in the authentic Italian dishes that are served in the restaurant named after him. In 2017, Roberto Payer and Executive Chef Franz Conde release the book 'Pure Italian Cuisine', in which Roberto's Amsterdam best recipes can be found.

Under the direction of Franz, all typical classic Italian dishes are prepared daily with great enthusiasm. Franz's vision on cooking and passion for pure Italian products give him plenty of inspiration.
